What is the performance difference in a 4870 x2 vs. 4870 in crossfire?

They perform about the same.

If your mobo is Xfire capable, get two 4870s. Two 4870s are more stable in terms for driver issues and if one dies, the other will still be ok. It is also cheaper than the 4870x2

If you don't have xfire, get the 4870x2
