I was wondering if anyone could tell me if my Gigabyte S Series GA-M57SLI-S4 ver 1.1 motherboard would be compatible with a PCI Express 2.0 GeForce 285xts video card.
And if it is, will it affect the performance?

Yeah it will work. You will have a small drop in performance using two GTX 285 cards with two 8x PCI-E 1.0/1.1 slots as opposed to two 8x (or better yet 16x) PCI-E 2.0 slots, but I don't think that small difference alone is enough to justify the cost of a new board.
