May I sugest that you delay that buy given that in 6 days ATi will reveal the new HD5000 series that will have DirectX11 and Nvidia will show the new GTX300 later this month. ATI will put the new HD5000 series later this month but Nvidia will not have them on the self before December(at least this is what the news says). But you seem ready to pay a lot for the GPUs and it would be a waste to have to pay 3 months from now for a new set of GPUs to play the new games at maximum detail. Anyway if you've already made your mind here it goes:
Since you went with EVGA the Motherboard could be this one:

If you want to save money go for the latest P55 Motherboard which is just coming out . As for processors go for Intel i5 750 (around $199) or Intel i7-860 (around $285)
ASUS P7P55D will become a very popluar board since is got a dedicated onboard microprocessor, helping every level of overclocker—from novices to hardcore enthusiasts— to boost system performance. An intuitive interface lets users perform overclocking without changing the BIOS setup, knowing any technical terms, or making sure that the system’s voltage and frequency are within safe limits. Auto Tuning enables automatic over clocking that is also self-checked for stability.
ASUS P7P55D (this board is just coming out, wait a week or so for prices to settle down)
MSI P55- It simplifies over clocking with a fully automatic Instant CPU Base Clock adjustment Button. It will automatically detect the optimal settings for your system. Also has CPU VCORE, VTT, DDR, PCH Voltage measure. ( not a fan of MSI though)
