I was looking on Tigerdirect and Newegg, and noticed that some motherboards said something like "1600MHz DDR3 (OverClocking)". What I would like it know, is whether you need to OC the motherboard to use 1600mhz RAM, or if the page was made before there was 1600mhz RAM (so they were saying it would support RAM OCed to 1600mhz).

Depends on the chipset, but usually you can just go in and change the memory multiplier to run the RAM at 1600. It is listed as an overclock setting because that speed is not officially supported by the memory controller.
