GTX 260 c216
Intel i7 920

I want to be able to go SLI in the futre. I also plan on over clocking

Which PSU is best

Avoid both of those PSU's you are looking at, neither are that good. Corsair 750tx or 850tx or PC Power & Cooling 750w would be my choices for that setup with the potential for SLI later. If you want modular, then the Thermaltake PSU that theAnimal linked is a great option.

Look into a 750w+ Corsair, PCP&C, Seasonic, Enermax or Antec Earthwatts PSU.

I really want a modular one. I noticed the termaltake one only has 2x6 pin pci cables. will that be good enough for two gtx 260 because each one takes up 2?

It would have enough power, but it's best to have the right amount of connectors on the PSU. That's what I get for assuming a 750W PSU would have at least 4 connectors.

Go with the Silverstone.

Try a Hiper PSU, they have some nice modular ones.

I did some research on the Hiper PSU. Most test bench reviews note that there a pretty solid psu but nothing special. There more well known in Eurpoe than the states.

There's also the Antec 850 TPQ 4 you might want to consider.
