Extreme editions remain expensive until they are no longer made. You might get a newer equivalent / faster CPU for a lot less in a couple of years though.
In fact, they sometimes remain expensive even after they are long past their EOL date. There is really little reason to get an EE chip unless you want to do some serious overclocking or want to use a crappy motherboard (and there aren't really any "low-end" X58 boards). But if you have the money for a 975 then you shouldn't be using a crappy board...
