The easiest way, although not necessarily the best, is to copy all of the data onto an external drive, break the RAID, build with the new disks, and copy back over. If you have RAID on the PATA (IDE) drives, then the SATA drives ought to hook up elsewhere. I'd then say build the new array, copy data over, and break the old one.
