I have zeroed upon the i7 920 for building a new computer. I want to go in for a mobo which gives me good stability and supports cool overclocking also keeping in mind my budget, which is quite small. I thought of getting GIGABYTE GA-EX58-UD5. Which are my other options ? and also, is this mobo good ?

Well I would recommend going with a P55 and a s1156 i7 unless your planning on running 2 or more VERY high end graphics cards.

Why? The X58 is much more expensive and also requires triple channel memory.

Actually I want to build a PC that gives me powerful performance till the next 4 years atleast and doesnt get outdated till then. Thats the reason I want to go in for an X58 with 1366 and triple channel memory. Worth it ?

Looks like a fine board to me. Might search this site for that model "EX58-UD5" and also Google it for reviews.

As for 4 years - that's beyond the "outdated" time frame. Any computer that delivers powerful performance today will do so in 4 years - the difference is that you will be asking it to do more by that time. No matter how leading-edge a system you buy now, in 3 years some folks will be saying "oh, that old thing." LOL

It does seem that Gigabyte is aiming the X58 more to the enthusiast and overclocking crowd more than the X55 - so may be your best choice.
