Say I buy a 2GB stick of Kingston Ram.

Can I then buy a second stick of the exact same ram later on and put it in the other ram slot or will I need to buy a 2 stick kit and replace it?

No. You're okay as long as the 2GB stick and the identical stick are dual channel.

Dual channel is a function of the mobo. You mobo must have dual channel feature - which it will if not too old. Then as long as you match the existing memory and install it in the correct paired slot (if you have more than two) the mobo will automatically sense it and run dual channel.
