I want to build a testing computer case like you see these hardware sites doing where all of the computer components are laid out flat for easy testing.. i need to know what the best material would be to use and any other useful information..

you know of any tutorials on home built ones? types of materials you should use and stay away from type of thing?

I've seen home built projects using plywood or MDF or acrylic. I'd be tempted to get an old case and drill out the rivets and set it up as a flat testing center mounted on 1/2 " plywood. Ground it like a normal case would be grounded. Here's some ideas here

Easiest way would be to find an old or cheap case with a removable motherboard tray and build around that or.... dissasemble a case so you have the mb tray, back panel and psu mount intact and everything else gone.
