So... any way to do this? I know it's been brought up before. I've
looked, but can't find anything concrete, and I would REALLY like to
have more than 8 sims on a lot.

I had more than 8 in my current Legacy house. The option to try for a baby
came up. I thought theere was an elder near death but after I heard the
chimes I checked and he had 12 days or so to live. So when the baby was born
I had nine. I sent a teen off to university the next day to get it back to 8
and the option to try for a baby came up. Again we had a brief period with
9. Obviously the game isn't counting the memebers of that household
correctly. I have heard of others who have had this but many of them also
reports general bugginess when they are at 9 people but I had no other
problems.

There were a couple of hacks but they had some serious side effects and even
their creators warned against their use.
