yes you can - the cables and sockets / HDD's are designed to backwards compatible. Most users will not see any performance difference between to two standarda as HDD's dont reach the maximum transfer rate of SATA 3.0 gb/s - however if you have an SSD you will see some improvements

SATA 1 and SATA 2 cables are the same thing.

Some say SATA 2 cables are better quality.. but you can still get good SATA 1 or *** SATA 2 so I don't really go along with that.

You'll have no problems using an older cable for your HDD and motherboard.
