Can I add additional drives to a RAID 5 setup?

Great majority of mobos allow to boot from USB devices, but that wouldn't work in this case because the windows files would be in use so you wouldn't be able to copy them to the RAID array, you need to create a image of the disks and copy it to the external, then use a bootable cd to extract the image back to the RAID array after you add the other drive.
