What's a significant difference between the two? From looking on newegg
Deluxe: http://www.newegg.com/Product/Prod [...] 6813131400
Evo: http://www.newegg.com/Product/Prod [...] 6813131407
The only real difference is the number of SATA ports and the Onboard Audio.
Anything I'm missing here?

Yes, there's a huge difference. The non-EVO doesn't properly support Crossfire because it has an x16 and an x4 slot. The EVO has three x16-length slots in x16/x1/x4 mode, but when you add a second card to the middle slot it does x8/x8/x4 mode. Thus, the EVO is adequate on two of its slots for Crossfire (x8 v2.0 is fast enough), while the non-EVO is not.

The Pro has the same electronic lane switches as the EVO for good CrossFire support.
