Drop the Xigmatek PSU and get one from Corsair, Antec(Earthwatts), PCP&P, Seasonic.

295 SLI is overkill. A single 295 is plenty enough for your needs.

I would agree with masterjaw drop the Xigmatek and get a unit he listed. I use PC-Power and Cooling and love them. On the GPU get a single GTX 275 and if later you feel you want more power do SLI. I think a single 275 or even a 285. But a 275 would do more than you need at that res. ;)
These are great and even in SLI will be more power than you need. :D
