I've found a lot of different answers on this question - some people say a stock I7 should be around 40C, some say as high as 60C ... I thought they should be under 40C with the stock heatsink & fan. Anyone have a more definitive answer?

They should be in the neighborhood of 40C at idle, and 60C under load. It also makes a difference whether people are quoting the core temperatures or the temperatures of the IHS (Integrated Heat Spreader, also known as the Case). Case temperatures will typically be 5C or so lower under load than core temperatures.
