SYSTEM USAGE FROM MOST TO LEAST IMPORTANT: Gaming will be the only particularly demanding thing
PARTS NOT REQUIRED: Keyboard, mouse, monitor, speakers, case (CM690), PSU (Corsair 850TX), OS (Vista Ultimate 64-bit - don't worry can get it for cheap and Home Premium would only save me $10)
PREFERRED WEBSITE(S) FOR PARTS: Not too particular.
PARTS PREFERENCES: Good ones
OVERCLOCKING: Yes
SLI OR CROSSFIRE: Maybe
MONITOR RESOLUTION: 1920x1200
ADDITIONAL COMMENTS:
Okay, basically looking to spend ~1200. The closer to 1000 the better, but I'd like a beast of a machine.
I plan on overclocking, especially if I go with the i7. Not looking to set records, just thinking about 3.4 - 3.5 GHz.
Total with shipping comes to:
$1183.33 w/ HD 4890s
$1099.14 w/ GTX 260s
Any compatibility issues? I'm pretty much ready to pull the trigger on all this. Should I go with the 4890s or the 260s? I'm tempted for the former, as the price seems really good right now. I know it'll be overkill, but it should last for a good while. And $80 isn't a huge difference.
They had some issues with the last vapor-X 4890, but I know for a fact the technology is sound. This looks to be a new edition that has no reviews on newegg, but I would be willing to bet on it.

500 Watt or greater power supply with 2x 75W 6-pin PCI Express® power connector recommended (600 Watt and four 6-pin connectors for ATI CrossFireX™ technology in dual mode)”
The 850TX I have has 4x 8-pin PCI express. Would that present an issue?
EDIT: Nevermind, they're splittable.
