Installing EVGA 216 Core 216 - SLI

I am in the process of installing two EVGA 216 Core 216 SLI into my new build. I have an antec 1200 case with I7 920 CPU and I am using a Rosewill 1000W PSU.

Each graphic card requires two 6-pin PCI-E power connectors but my PSU only has three 6-pin connectors and 3 8-pin connectors. The 8-pin connectors are 6+2. Is it safe to assume that if I use the 8-pin connectors and use 6 pins (do not attach the 2-pin addition) it will run the card safely with no issues?
