What size battery backup do I need to run 5 servers so that they have 10 - 15 minutes to shut off correctly when we receive a power outage

You need one with 5X the capacity to handle a single server...

Seriously, though - what you need to do is to determine the power consumption in Watts) of your servers. This varies with the amount of memory, CPU type and loading, and the number of disk drives, etc. Once you have that, it's a matter of matching it to the UPS capacity.
