I recently built a new rig and didn't have enough in my budget to get a solid power supply. It has random restarts and blue screens about every other day. I am thinking it is the power supply but I am not sure how to check that. Here is what I put in it as well as the voltages from SpeedFan.

The voltages I am getting from Speedfan are:
Vcore1: 1.33V
Vcore2: 1.97V
+3.3V: 3.36V
+5V: 5.05V
+12V: 12.03V
-12V: -3.15 to -4.15V
-5V: -4.05V
+5V: 3.58V
Vbat: 3.22V

Any feedback would be very appreciated!

Software voltage readings are often very wrong, and never quite right. Even the less informed tech sites know to review their PSUs using a volt meter.

Did you cut corners in the wrong place? Absolutely. Never buy or use a cheap PSU. Get rid of it, no matter if it's the cause of your current crashes or not.

Go into your BIOS and check to make sure your RAM is running at the correct timings, frequency, and voltage.

Just echoing what was said above. Make sure the rest is solid first, but I would bet money its the PSU. I did the same thing thinking that case/psu would save me money. Ended up having to replace the PSU within 6 months as it had completely died. Get yourself an efficient PSU with multiple rails and you'll be fine.
