Right now I am building a Desktop that will be hooked to my 50" Samsung Plasma VIA HDMI with a Sapphire 4890 Video card currently I do not have a AV reciever with a surround system but eventually I will and was wondering if I could simply use the TOSLINK audio out of my TV into the AV reciever?

Optical should work fine as long as the tv has a built in encoder or able to pass encoded surround sound signals through as they are for decoding into seperate audio channels.

I think I got that right but not sure. Basically yes, an optical cable will be able to connect your tv to a receiver.
