Corsair 750HX Question

Is the 750HX enough for two 5850's and an overclock to 3.6/7Ghz on the 955BE?

Absolutely! No problem.

ATI officially recommends a 600 watt power supply with 40 amps on the 12 volt rail(s) for systems with two 5850's in Crossfire mode. The Corsair HX750 power supply has a single large 12 volt rail rated at 60 amps.
