Building file server for multimedia

When DVDs first came out, I was thrilled that it was so easy to amass a high-quality video library, compared to buying expensive laserdiscs. So I bought them. A LOT of them. So now I have about 1000 DVDs that I'd like to archive and organize.

I currently have a small 4-bay NAS with 2x2TB and 2X1TB in Raid 1. I was previously streaming to a PS3 in my home theater and an Apple TV in my living room, but I am getting freezes and choppy audio on the PS3. I recently built a HTPC with XBMC and a wired Gb connection to my router, which works great.

I would like to upgrade to a more elaborate server. I am thinking Raid 5 with 4 x 2TB drives. I know there are motherboards with RAID capabilities, but I have also heard that dedicated RAID cards are better. I have no experience setting up either.

My question is: if using RAID on the motherboard, what would you get for a server? If using a RAID card, which would you get? Since the server will be headless, I am thinking about something that is rack-mountable that I can store in a storage room in my basement.

I don't really have a budget, but $1000-1200 would be ideal.

Any suggestions?
