My comp so far:

I-7 920
NVIDIA GTX 285, probably will do SLI within the next year
OCZ DDR-3 1600
ASRock X58 Extreme
Haven't decided on hard drive, case, or additional fan/heatsink yet.
Plan on overclocking the I-7 up to 3.8 gigs or so and probably the RAM. GPU will arrived OCed since it is BFG.

I'm personally torn right now between the Corsair HX- 850 and the TX-850.

I'm curious if it is worth paying $60 (+ $20 MIR) extra for the newer HX model . Apparently the HX runs about 10% more efficiently and is "modular." Not sure how that should affect my decision making.

This is my first build so any suggestions, especially PSU related, are greatly appreciated.

All I do is drill some extra holes in the bottom of my cases (bottom mounted PSU's) and tie down any leftover cables. It's cheap, neat, and the cables do not interfer with cooling.

modular means u can remove what cables u wont use in ure case, less cable clutter in a way. only the main cables are hardwired to the PSU.

850HX is a sensational PSU so I'd go for that - modular cables, as Ciuy says, means you only plug in the cables you need for your build, so it reduces clutter in your case.

Sometimes power supply selection is a matter of personal preference. My own personal pc has a Corsair modular power supply. There are fewer cables inside the case for a little bit better cable management and a little bit better airflow.
