So my current system has two 8600GT in SLI with a E6850 CPU, 1 HDD, 2 Optical Units, and a few peripherals. The only problem is, I am unaware of my PSU specs due to weird placement of PSU in case.

So my question is, if I wanted to upgrade to a single GTX 260 and use some Molex to PCI connectors, would my PSU be sufficient with only the info I provided?

Sure, why not?, without knowing or caring what the PSU is or outputs why not just go for it and slap a couple of 285's in there?, it'll be fine.

Unscrew the psu and check.
