The i7 920 will overclock fine to ~4ghz with a good aftermarket cooler.

The 5870 has DX 11 support something no Nvidia card supports yet, is cheaper than the 295 and almost is as fast. You can always get another and Crossfire them with the money saved on the CPU.

Edit: Read it again and either the WD Black 640gb or 1tb models would be faster than those 500gb ones. Also the new Samsung Spinpoint F3 500gb drives have a single platter and are even faster. If you are going to spend that much I would get a Velociraptor or even go with SSDs for max speed.
