I'm looking into a new heatsink for my Phenom II x4 945, possibly going to overclock in the future. As of now, my idle temps are at around 36-40C, and my full load temps are 57-60C.

I've been looking into the Sunbeam Core-Contact Freezer, specifically the 120mm version, but I'm concerned whether or not it will fit into a Rosewill Challenger. It's about 7.5" wide.

If anyone could help, it would really be appreciated.

Yep it will fit!
125(L) X 104(W) X 155(H) mm
Another option is the CM 212+ 120 x 79.7 x 158.5 mm (L x W x H) which also fits in a Challenger but more of a squeeze(height)
The 212+ plays much nicer with ram/dimms though it's only 80mm wide.

Not sure if this particular CCF fits your socket though i'm not up on AMD.

Personally i'd buy a 212+ i know it fits the Challenger from feedback on Newegg. And it's universal mount.
