I currently am running an xfx 780i mobo with a q6600 running at stock clocks and two mildly OC'ed gtx 260 core 216's. I just bought a 30" dell 3008wfp which displays 2560x1600 resolution. I have heard that the updated nvidia drivers are allowing tri-sli setups to scale much better than before. I am worried that my q6600 will bottleneck the three cards and I dont know much about OC'ing. I could sell my q6600 and grab a q9550 cheap off of craigslist or I could go all out and just build a core i7 rig. Let me know what u think.

Welll at that high of a res you can OC the Q6600 and it should be fine for those GPUs.

Or you can get a Q9550 and OC it even higher to help keep the GTX260s happy.

Either way, a Core i7 would not be a worthy investment for those GPUs so unless you plan on replacing all your setup (GPUs too) then what you have is fine or a Q9550 will be fine.
