I'm overclocking my i5-2500k processor right now and it seems to be pretty stable at 4.5ghz but the temps are maxing out at 64c on air cooling. Would it be worth it to go to 5ghz for gaming if i had water cooling?

As davcon already said, no gaming increase he is 100% correct, I've already tested that.

The only gains you'll get going to 5.0ghz is bragging rights and increased benchmarks scores like the 3Dmarks, but that does not translate to gaming, the only thing that will increase your gaming is better graphics.

The 2500Ks sweet spot IMO is 4.5ghz, it will do whatever you need it to do at that clock, I run 4.5ghz 24/7 even though I have reached 5.1ghz 100% stable.

Any cooling change goal should be to run the 4.5ghz clock as cool as you can for longevity.

That's the best advice I can give you.
