I have a Gateway FX6800-01e:

MOBO: X58 Express Chipset
CPU: Intel i7 920 - 2.67 GHz
PSU: Antec Earthwatts 750W
GPU: ATI Radeon 4850 (1GB)
RAM: 9GB DDR3 1033MHz
HDD: 500GB Caviar (Green or blue?)

I have the program setFSB set to 37/760, and 380/760, and CPUZ reads it as 2991MHz, but core temp reads it at around 2300 - 2600 MHz(changes frequently)

Are the changes legit? or is CPUZ wrong?
 
Solution
I will assume that your irg is a pre-buil rig and that's the reason for use setFSB.

Check you options in BIOS for save energy (usually dowclock the CPU) for save power and reduce temps.
