On my XP pro partition, I have the ability to add in-game options for HD resolutions through CCC. However, the Windows 7 CCC does not seem to have this option. Am I blind or is this gone?

Windows 7 isn't even out yet: you may very well have stumbled on a bug in the beta release that has been fixed now.
