If you are only sending video they will both work identically, the adapter doesnt change a thing because they are electrically compatible so each of the video wires exists in both cables and carries the same signal, if you have it connected to a sound system with the video then headed to a TV then HDMI is better because it will carry the sound along with it.

As far as picture quality they are exactly the same.
They both send a digital picture through the cable.

Personally I use a DVI to HDMI cable to connect to my 42" HDTV.

If you are only sending video they will both work identically, the adapter doesnt change a thing because they are electrically compatible so each of the video wires exists in both cables and carries the same signal, if you have it connected to a sound system with the video then headed to a TV then HDMI is better because it will carry the sound along with it.

Also, as I understand it there are DRM protocols built into the HDMI cables that don't exit in DVI.

HDCP is the DRM you're referring to, and that can be carried over DVI as well as HDMI. The only difference is that DVI existed before HDCP, so lots of DVI kit doesn't support HDCP. HDMI however, came out after HDCP (or close to it) so nearly every HDMI connector supports HDCP. You're basically looking to see if your graphics card and monitor/TV supports HDCP as otherwise your Blu-Ray film won't be sent to the screen in HD.
