Here's what I have so far: A barebone kit for $809.99 CDN which comes with:

* EVGA X58 SLI LE Socket LGA1366 Motherboard
* Intel Core i7 920 2.66GHz Retail Processor
* 6GB Corsair XMS DDR3-1333 Triple Channel Memory
* Hitachi 1TB SATA Internal Hard Drive
* Ultra XBlaster ATX Mid-Tower Case
* Ultra LSP750 750-Watt Power Supply

DVD drive

and XFX 4850 with Windows Vista for $279.99

My biggest concern is with the video card (4850), I'll be running at 1680x1050. Is it powerful enough, will it fit in the case? Any help would be appreciated.

A 4870 would do better at that resolution but the 4850 is ok.
Wait 2-3 days, Prices of current cards will drop when the new cards are released.

So I should order the barebone kit and wait a week or so to order a video card?
I know the new i7 and i5 processors are coming out soon but still that barebone is a great deal, right?
If the price of the 4870's do drop over the next week or so, I will get one of those instead.

EDIT: I ordered the kit and optical drive. I took your advice an will wait a few days for the price of video cards to drop.
