I have used a Griffin iMic USB audio in/out device.

It depends on what you're looking for. It's hard to know what to recommend
without specifics on what you have and what you're trying to do. The iMic
device has audio in/out (but not simultaneously -- there's a hardware switch
telling the unit which to do, output line level audio or input line level
audio). The quality is acceptable for some jobs (up to 48k sampling rate,
24-bit stereo).
I've found that part of the experience depends on the software in your
operating system. Some OSes make it very easy to simply plug in the USB
device and get going with using it. Other OSes make this more complex.
I have not found that the iMic requires any software to use. I imagine that
other USB audio hardware would work similarly.
