I have a QX9770 overclocked to 3.6GHz. Will this CPU will be bottlenecked with 2 5870's in crossfire? I'm running a 24" (1900x1200) monitor. Games like Fallout 3, Farcry 2 and whatever else comes out in the next few years.

Yes. There are reviews showing that 5870s are even slightly bottlenecked by an overclocked i7.

However, the bottleneck will not be significant...so with your OCed cpu it should be ok.

You'll get close to max fps at maximum settings on those games with a single 5870 so two should certainly do it.

Fallout 3 and Farcry 2 both play pretty well on my single GTX 260 with Q6600 @ 3.2Ghz, @ 1920X1080. Just installed a second GTX 260 and haven't tried them yet with SLI.

I'd imagine a single 5870 would play those games pretty darn well, let alone two in Crossfire. With the price on the 5870's, were it me, I'd buy a single card and pick up a second one 6+ months from now when the price comes down. Almost no need for two of them right now I'd think.
