No,Hyper threading doesn't have an impact on gaming and in most apps.
There are few apps like AVG which benefit from it

Both are good,go for i5 750 and you save some bucks,here is a good review:

Both are good CPU and will not bottleneck any gfx card available.
Get the i5-750.
