I do plan to OC. Does anyone have any recommendations for an intel motherboard or is the 955 my best choice?

Since the i5 has an integrated on-die PCI express (it only has 16 lanes) you would be running crossfire at X8 for each card. Because of this, with your budget, I would recommend the 955 with the FX mobo (full X16 lanes for each card). These new GPU's require a lot of bandwidth through the PCI express interface and you don't want to bottleneck them.

Just wondering, does the i7 have the same integrated on-die PCI express?

Depends on which i7 you'r talking about cause socket 1156 that you can use for i5 and i7 has only 8x8, but i7 socket 1366 has 16x16 so if you whant to cf or sli use 1366 or amd mobo and cpu as papperman posted.
