This is a first for me please be as harsh as possible :)

Motherboard: ASUS P7P55D
CPU: Intel I5-750
Video Card: Zotac GTX 285 1GB DDR3 ZT-275E3KB-FSPa
PSU: Corsair Power Supply HX750 750W
RAM: OCZ 4GB Platinum XTC (kit 2x 2GB) 1800MHz
Case: Antec Nine Hundred Ultimate/Advanced Gamer Case
HDD: 2x Seagate Barracuda ES.2 3.5" 250GB ST3250310NS

I am still looking for a good storage HDD (1-2 TB) could you please recommend some?

I am planing on overclocking this rig as well (I am sure that I can play any game on the market with this one but will OC it in the future).

I would also like to have another 1TB or 2TB HDD for storage, the two Seagate's will be in raid to double the writing/reading speed. I will only install applications on them. The OS will be on another HDD.

That Asus X38 motherboard does NOT support the LGA 1156 i5 CPU. The X38 board is LGA 775. You HAVE to get a P55 chipset board for an i5 CPU. There are currently no other chipsets that support the i5. I just needed to post that before you made a big mistake.

The OCZ Ram i found should be 1800 Mhz and not 1600, wouldn't that be better than the G.Skill Ripjaws ?

What mobo should I get which supports DDR3 and the i5 ?
 
ALL P55 motherboards use DDR3 RAM. The RAM controller is integrated into the i5 chip and doesn't support DDR2. Any P55 chipset motherboard will work. Just pick one that has the specs you want. I don't know what's available to you in the Czech Republic . That Asus P7P55D board would work fine. I would stick with either Asus or Gigabyte. I also like the GA-P55-UD3R board.
