OVERCLOCKING: Yes

SLI OR CROSSFIRE: Yes, not now if I can wait

ADDITIONAL COMMENTS: Trying to finish build. Bought the EVGA mobo with the intentions of not replacing it anytime soon as while as the i7 920. Not sure on a start up video card and ram. Debating whether to get 2x nVidia 9800 GTX (SLi) or stick with one higher powered gpu.

Those are good choices.
I would stick with that video card.
You need a heatsink for overclcocking.
I suggest this one:

6 GB of DDR3-1600 should be enough if you want to save on the memory.

Thanks man. Was a little indecisive of whether i should get the 275 or stick with 260 core.

Reply to jlfox13

GTX275 is a lot faster for a little extra money.
