If it was a server and used ECC ram, then it would probably log it in the event viewer. Other than that, when did you notice performance degradation? Since the PC was off when the RAM was taken, the only thing you will be able to know is when you first turned on after it was gone. Also the BIOS would have come up with a message about ram amount changing. So from the last time you used the computer to the first time you saw that message is when it was taken out.
