No, you don't need an EFI motherboard to run GPT partition table. BIOS motherboard can also run GPT partition table.
All you have to do is to install Partition Wizard Home Edition software in Windows and make GPT partition to the other hard disk. If I am not mistaken, you can make partition up to 128 partition. You can install any operating system as long as it is GPT compatible. Some Linux OSes are GPT-aware.
