i have a intel dual core 3.16 ghz (stock) wolfdale processor and im wondering if it would run efficient with a 5870 or even a pair of 5850's.
thanks for your time in advance.

It should be fine. If it does bottleneck and I doubt it would you can overclock very easily. E-8500 will go to ~4ghz easily with good cooling and a decent motherboard.

im confident i can overclock my cpu, considering i have the arctic cooler 7 and a decent foxconn crossfire mobo it shouldnt be a problem. how will i be able to tell if i bottleneck? thanks very much.

My opinion is even if it does not bottleneck you should overclock. Windows and programs will run faster. Even though quad cores are becoming more and more common most software can not utilize four cores yet but all software benefits from higher clock speeds.
