I understand that the graphics card is weak but newegg.ca discontinued the ATI HD 58xx cards and i dont want to spend $200+ on a decent graphics card and then buy another one for $250 when they get them again.

You could always buy a single 5750/5770 and add another one later on (or right away). Crossfired they're equal to the 5850 and it means you don't need a stopgap measure.

Why get an i7-920? These don't outperform the i5-750/i7-860 at photoshop and are even worse at gaming (unless you're going to heavily overclock). Saves you money, which you can spend on a part that really matters for gaming: the GPU.

640GB HDD's aren't that good. They use 320GB platters, which is rather slow. Get 500Gb/1TB models (the Samsung spinpoint F3 if you can get them, they're the best you can get, and cheaper than WD's offerings)
