Im looking at doing either one of the two setups. I will have games on the drive so they will be used but not all the time the most used games and OS will be on one of two SSDs. What setup would give me best speed? TB hd is 7200 rpm Sata III.

The SSD cache on a 1 TB HDD will give you better performance than HDD RAID.
