I'd be careful about going with WinTEC. I've read some positive reviews, but they aren't very widely known. There's always a law in computer parts buying about scraping the bottom of the barrel: DON'T DO IT

This kit is made by a more reputable vendor and is actually cheaper after the rebate: OCZ Gold 6GB (3 x 2GB)

This Hard Drive delivers better performance for the same price Samsung Spinpoint F3 1TB, however, it is out of stock right now.

Dont use a caviar green drive. That is WDs a low power, eco friendly drive. Get a Samsung spinpoint F3 or Seagate 7200.12 or WD Caviar black, which is the performance line.

The ASRock x58 extreme motherboard is the same price as that MSI and got very good reviews everywhere.

those two items are going to be changed... anything else I might need to buy? Will the stock coolers be ok? Should I get some more case fans?

If you are not overclocking and you have a case with good airflow then the stock cooler is fine. You can always purchase those addons later if you decide you want them.
