Can you have two ATI cards in Crossfire on an nForce motherboard?

I read that Crossfire is now capable on any mobo that has two PCIE x16 slots. So would an nForce mobo apply?

No, you have heard incorrectly.
Only ATI and Intel produce motherboard/chipsets that support Crossfire.

The chipset determoines this
X58 MoBos can do both XFire and SLI
nForce is SLI only.
