How to transfer files from one computer to another using a network cable, without connecting to the internet (ie sharing)

Either use a router between them, or a crossover type Ethernet cable. Personally, I would spend a few extra bucks for the router, but the crossover cable works perfectly fine -- you can make them yourself (see wiki for the wiring schematic) or buy them.
