6 gigs of ddr 3 ram
x58 platinum motherboard
1 tb wd black hd 7,200 rpm
dell 3007 wfp display 30 inch

You'll need two 5970s to see any performance boost. Two 5870s would give you no increase in performance because a 5870 is roughly equal to a GTX295. (5870 performs slightly worse, but makes up for it with better Xfire scaling)

Since a 5970 is two underclocked 5870s, a single 5970 is equal to two underclocked GTX295s in Quad SLi.

Two 5970s would roughly be equivalent to four underclocked GTX295s in Octo-SLi.

If scaling was perfect, two 5970s overclocked would give you double the performance of your current 2x GTX295s. However, due to not-so-perfect scaling and immature drivers, you can expect maybe a 50% increase in performance.

But two 5970s is a waste of money if you only have a single 30inch monitor. A single 5970 can run 3 monitors with eyefinity, and two of them can run 6 monitors with eyefinity.

So I suggest you sell your GTX295s (you can probably get $700-$800 out of them)
and buy two 5970s for $1200, and overclock them.

You can purchase 24"+ large monitors for about $250 each so all of this would fall well within your budget.

Btw, you'll need at least a quality 1000watt PSU to run your rig with two OCed 5970s.

But with the new games coming out I know this may seem a kind of childish question would the 2 5970's be btter suited to running them on maximum settings
and I have a good 1000 watt power supply so I should be ok

Get 1 5970, and 3 30' Displays, play on 1 display until ATI allows for CF/Eyefinity, then buy the 2nd 5970.

You'd see a decrease w/ two 5870's

http://www.tomshardware.com/reviews/geforce-310-5970,24...

the GeForce GTX 295 offers very notable gains over a single Radeon HD 5870 in the great majority of game titles

While the 5970 would show an increase, refer to the article here,

http://www.tomshardware.com/reviews/geforce-310-5970,24...

You can use this hierarchy to compare the pricing between two cards, to see which one is a better deal, and also to determine if an upgrade is worthwhile. I don’t recommend upgrading your graphics card unless the replacement card is at least three tiers higher. Otherwise, the upgrade is somewhat parallel and you may not notice a worthwhile difference in performance.

you're only going up one notch, so i don't think you gonna be wowed.

"Should I upgrade?"

No. You already have near cutting edge technology. Upgrading now would be TERRIBLE cost/benefit. If you keep that money in the bank for a year or so maybe you will get something worth of an upgrade. And guess what? Your system is more than enough powerful to go through that year and even more and still stomp all over your games (no DX11 though). Unless of course you're Mr Burns and use a giant monitor that takes the entire wall of a room. Or take money for granted (I might too if I was rich :D )

@okini
Instead of slamming your keyboard into a juxtaposition of letters & writing a stream of incoherent acronyms maybe you should inquire to why he wants to upgrade & explain the cost/gain.
Mayhaps inquire in a more pleasant matter without insulting OP.

If you use a 30in monitor, game at 2560x1650 with 8xAA & everything on high you might notice it. I would recommend a 3 x 24inch monitor setup with Eyefinity.

You probably will, but a jump from 100FPS to 125FPS isn't noticeable.
To put the 5970 to good use try to get 3 x 24inch monitors.
