I have two 120GB SSD's and a 1TB HDD. I want to use one SSD for my operating system and a couple other programs, the other dedicated to FSX and all the add-ons I use, and the HDD for storage. My question is what is the best way to set this up and what other components will I need?

You shouldn't really need any other components. When you install Windows you select the drive on which you want to put it and install as normal. Then when you boot into Windows the other 120GB SSD and the 1TB HDD will just show up in Windows. If they are new drives you will have to initialize them in disk management, but that's about as complicated as it's going to get.
