CPU: i5 750 is fine.
GPU: If gaming is your least important use, then 5850 is possibly overkill. 5770 would be quieter, cheaper and serve you well.
RAM: the cheapest one from any major manufacturer (Corsair, Patriot, OCZ etc.). Low latency-high frequency RAM is expensive and adds 0,000001% to your system performance unless you spend your day zipping files.
HD: if you are really dealing with video coding and photo-editing, consider a RAID0 with two 500Gb HD, instead of running one 1Tb. It should boost your peformance if you are dealing with very large files. If that´s your choice, consider a low-end backup system.
Case: Cooler Master CM690II. Great case and retails for around US$85.

Gaming is his least important thing, but he said he'll let me use it for gaming so I chose the 5850 as I like my eye candy and he let me choose that one cause it would be good for the multiple monitor thing.
